Great news about your boy and yes Whole Foods has good goat's milk. I use the

full fat

version.

You don't have to but you can if you like.

You don't have to use organic but can if you like.

There's info for making goat yogurt (incl. starters etc.) at

http://www.pecanbread.com/goatyogurt.html

We usually suggest starting with small amounts (1/8-1/4 teaspoon)

and gradually working up to larger amounts.
