If you started with the intro or at least peeled and cooked fruit and veggies and then gradually try more complex foods any negative changes in symptoms would let you know you aren't ready for them yet. My DH did the diet a few yrs back and since he didn't have any symptoms just ate anything legal. Does your DH have symtoms of any kind? My son really wanted some (legal) peanuts we had in the house but he's only been on the diet 3 weeks and is really turned off of baked nut products after his first try on the diet. He tried a little baked nuts with no problems. AFAIK, he hasn't had any fallout from the nuts. He claims he'll turn down any baked nut products. So this is a great time of year to be ordering new nut flour though I'll have to handle it carefully. Because with Passover coming up, I'll splurge and make some great nut things with any extra flour for the rest of the family too (e.g. pizza). He also liked Raman Prasad's cheese crackers. Like most things, he ate them to the point of becoming sick of them, so I won't make them so soon. He really just misses bread and pretzels etc. I made " pretzels " with the Lois Lang bread. They came out in a blob, which I sliced and baked like biscotti. I thought t was really onto something but he didn't like them. At this point, we should be able to experiment. He had a peeled raw apple, and a very ripe pear with no problems. I'm gong to try cooked cabbage next week. Possibly a little early, it'll just be one month, but it's for a special dinner and it's something legal he asked for - meatballs cooked on a bed of wilted cabbage in tomato sauce.
