Amy,

That would probably work. They also reheat well.

So you could make them in the evening, then stick them in your oven on

" warm " while everyone is getting ready in the morning. They should be

warmed up in about 10 minutes.

Coconut oil will work instead of butter.

Dear Amy:

My children love the Midas Gold pancakes. I serve them with honey or with honey

mixed with cinnamon. A copular tips. Coconut oil is perfect, they come out

delicious. They cook very fast, so be prepared to turn alot faster than a

regular pancake. I make them small so they can stay together better since they

cook so fast. Because they cook so fast, do not turn your burner past medium

heat. I use right below medium heat. Good Luck! Remember the one thing good

about SCD, even if it doesn't come quite right, it usually is still pretty

edible. Eileen

I have never tried SCD pancakes with my son before. I want to make the recipe

I found

" Mida's gold pancakes " , because I happen to have a bag of almond flour and

eggs in

the refrigerator. I am not a morning person, so I was thinking I could mix up

the

batter and let it sit in the frig overnight. Then in the morning I won't t

have to think

about measuring. I know I sound like a lazy Mom, but do you think this would

work?

Also, I am planning to cook them with coconut oil instead of butter. Sound ok?
