Oddly, the less I try to bake the happier he is! He is OK with simple foods, some of my SCD concoctions, diluted juice. We have come a long way. He looks terrific! Color is better, mood, I think, is better over all. He is close to being back 100% energy wise. I decided, for him and for our family, we are going with the kefir for now. We are starting with almond milk, very slowly. I will do yogurt as well, especially when I am ready to introduce goat yogurt. I've done quite a bit of research. I don't think lactose is an issue for us, the alcohol can be kept to a bare minimum. I will fine tune that as we go--don't want that! lol That is actually my biggest concern. I'll let you know how we do.
