I cook up a batch of chicken pancakes (don't really have a recipe, it might be on one of the websites): basically put chopped leftover cooked chicken in a blender, add enough eggs to make it whir, maybe a little bit of water to make it a bit runnier, blend the dickens out of it until it's smooth and pourable, and make pancakes with this. I sometimes add sage or fennel to the batter for a pizza flavour, and some sea salt if I'm using unsalted butter. A runnier batter makes thinner pancakes, which my kids prefer to the thicker ones. Then make pizza with legal pizza sauce, favourite topings and grated brick or swiss cheese on top. Put on ungreased cookie sheet, bake at 350 for about 15 mins until cheese bubbles. Yum. Can't get enough. And leftovers freeze well: freeze individually on cookie sheets, then place in a bag and take out as needed. I take them out of the freezer, wrap in plastic wrap, and the kids eat them " cold " at school for lunch. To add calories and to keep them full, I fry in lots of butter/coconut oil, add olive oil to the pizza sauce, and use full-fat cheese. Good luck. I just substituted cashews for the almonds. Someone said that they are higher carb. but my little girl especially won't eat anything that is at all grainy looking or feeling. This makes about 12 in pizza: 1 cup almond flour 2 eggs 1 Tbs olive oil salt garlic italian spices (optional) mix well - add more almond flour until the 'dough' is in a ball. Pat flat on a greased pizza pan or stone until you have about 1/4 in crust all the way across - pinch edges to form the outside of crust. Set oven to 350 and put crust in oven until it's pre-heated - this will firm up the crust for the tomato sauce, cheese and toppings. I use Jack cheese and the breakfast sausage recipe from Lucy's Kitchen Shop cookbook. Bake 10 min until cheese is melted and bubbly. It's veryyyyy yummy and tastes very much like regular pizza! The almond flour doesn't bother us other than I can't seem to get it fine enough that the kids like it. The cashew is soft enough that it doesn't seem to bother them. I have ordered some flours and am hoping that they are finer than the almond that I have made. If you get blanched almond flour or blanched almonds to grind into almond flour, the result will not be grainy looking. It's the almond skins that give it that look.
