But, I learned from a chef that the key to preventing sticking when you are not using Teflon pans is to preheat the empty pan for about one minute. We use stainless steel (but it it probably true for cast iron, too). I put the pan on the flame for about a minute, add the oil, then add the food immediately. Works great and cleans up easy.
