I want to make the recipe I found " Mida's gold pancakes " , because I happen to have a bag of almond flour and eggs in the refrigerator. I am not a morning person, so I was thinking I could mix up the batter and let it sit in the frig overnight. Then in the morning I won't t have to think about measuring. I know I sound like a lazy Mom, but do you think this would work? Also, I am planning to cook them with coconut oil instead of butter.
