We use ghee. I would just make sure the label says casein free. We use

Purity Farms brand. It may only be available at health food stores, not

sure. You can order direct from the company www.purityfarms.com (no $$

interest here).

You could also just use coconut oil, olive oil and such, if you'd rather be

certain of avoiding casein.

The percentage of casein in butter is miniscule. Ghee is lovely stuff if you

prefer and try

coconut oil too. many here like it and praise it.
