Fourteen signed for the entire six week session and more are expected to register in time for the first class. Many who attended brought along another family member. People from last year who returned are doing very well on SCD. Jodi, and I were pleased with the enthusiasm and I think Loblaws will be too. Their coordinator has been so supportive and offered each person who signed up for the whole course a free coupon for another cooking class worth at least $30 as an incentive. We explained, the history and science of the diet, invited participants to detail their experiences and diagnosis, We went over the menus, but had to reserve many pertinent details for the actual classes because the discussion was lively and prolonged. Jodi brought along delicious " Sand Cookies " from the Grain-Free Gourmet cookbook. SCD has changed our lives. For me it usually means bouts of sleeplessness LOL! Carol F. I live in Indiana. Carol and Jodi live in Canada. With regards to me, last May I did an SCD cooking presentation at AutismOne in Chicago. We took the time they gave us gratefully. They increased as the course progressed and we were welcomed back and offered our previous time slot. Weight Watchers and another group have Saturday every year. Some of our students are Kosher and observe the Sabbath on Saturday so it would not be possible for them to attend. The others who teach with me work and do not want to give up weekends with their families. Some of the recipes we use are right in BTVC and other cookbooks. Some have been contributed by those on support groups and some are originals that we have made up. We do give a lot of tips and discuss many points that are raised by beginners on the list. Two simple but delicious recipes are in BTVC, Muffins (using pecan flour) and the chesecake. I cannot praise them highly enough and people not on SCD like them too! Carol F.
