There's a great recipe for cheese crackers by Raman Prasad. I can't send it here because of copyright issues - in it's a cookbook sold through Lucy's Kitchen - but maybe someone has a link. I find them fairly easy to make, and you get a sheet of crackers. There are legal apple chips sold through Digestive Wellness though I found them locally too. Rumor has it they're coming out with other chips soon. If you get a dehydrator, and it may be an investment, making them yourself seems pretty easy. About crunchy fruit - raw fruits (and veggies) aren't advisable for a while. >2) What are some breakfast ideas, quick and simple stuff...dont have > time to cook in the mornings except on the weekends, but i am afraid > that a banana or something like that wont be enough for > breakfast...all simple quick ideas wanted! Guest guest
Welcome to the group Randy 'the Rainman', > Randy from Dallas here...we are starting the SCD diet (were only > casein free previously and were going GF/CF but decided i liked the > basis for the SCD 'caveman' diet more... > > I am a single dad who is recently divorced and my cooking (if you can > call it that) in the past was microwave-prepackaged land... > > I will be asking lots of questions as we start this thing for real > now...so, here are my first few... > > 1) Looking for pre-made SNACK foods (something to replace the pretzels > and popcorn that she used to eat)...cost IS an issue, but i have so > little time i wont be able to make meals AND snacks from scratch. > Course, there are fruits, but i want stuff i can buy thats crunchy if > possible... There are some places that sell premade snack foods listed at http://pecanbread.com/foodprep.html#ready (digestive wellness is one. *But* if finances are a concern (as it is for most of us) making snacks at home is far, far cheaper. Also when starting the diet we suggest you start with the introductory diet (called the intro)The original intro is in BTVC or at http://www.breakingtheviciouscycle.info/ under " Beginners " . If you are going to continue to be CF you can fall the dairy free version of the intro at http://pecanbread.com/foodprep.html#intro . The intro should be 4-5 days for those with diarrhea and 2-3 days maximum for everything else. After the intro depending on your child's symtoms increasing complex foods can be added in as she heals. This chart may be helpful http://pecanbread.com/foodprep.html#beyond Basically after the intro start with peeled and cooked fruits and vegetables(which are easier to digest) and work up to just peeled and raw and then unpeeled fruit. For example: start with homemade applesauce, after healing some, peeled raw apples, eventually whole apples unpeeled. You may also find this helpful: http://pecanbread.com/foodprep.html#menu > 2) What are some breakfast ideas, quick and simple stuff...dont have > time to cook in the mornings except on the weekends, but i am afraid > that a banana or something like that wont be enough for > breakfast...all simple quick ideas wanted! Again see http://pecanbread.com/foodprep.html#menu We do 1. eggs (over easy, scrambled, boiled, poached with homemade hollindaise, omelets), 2.bananas covered with legal peanut butter or 3.bananas sprinkled with walnuts, coconut, a few raisins and yogurt and honey 4. nut flour (blanched almond or pecan flour etc) simmered with water (simmered 4 minutes), cinnamon and chopped apple and a dollop of yogurt (takes 5 minutes) - similar to " cream of wheat " cereal. 5. nut bread with homemade jam more ideas at: http://www.scdrecipe.com/recipes.html (there is a breakfast section) http://pecanbread.com/recipes.html > > 3) What to pack for school lunches? Depending on what foods your daughter tolerates and will eat: I pack hunks of cheese, homemade applesauce (rubbermaid or tupperware containers), raisins (an advanced food item), ripe bananas, ants on a log (celery sticks with peanut butter and raisins, for our nut free school I made a chhese sauce similar to Chhez whiz) wrapped in plastic wrap, container of yogurt and honey with strawberries, blueberries, banana etc., homemade fruit leather > 4) Places to order pre-made stuff like snacks, etc? http://pecanbread.com/foodprep.html#ready There is a real adjustment/learning curve at the beginning of the diet but once you get the hang of it it becomes much easier...and of course nothing compares to the rewards that SCD brings. If you are going to continue to be CF you can fall the dairy free version of the intro at http://pecanbread.com/foodprep.html#intro . Guest guest
Hi Randy, I wanted to share with you a few things that we do for breakfast. We do crack and peels(hard boiled eggs prepared ahead of time), egg sheets(2 eggs, a little water, maybe a tea. beat and pour on a hot skillet. They cook really fast. This is like an omlet but thinner and faster.) Muffins made ahead of time. One of the bread recipes made ahead and put in big muffin tins. we then slice and toast it in our toaster oven. Pancakes(I make a big batch and keep the batter in the fridge. I make my own sausage in a big batch and cook it all up in the oven, freeze and pull out just what I need for breakfast. You can put it in a fry pan with a little water and cover. It can be heating while you are doing something else. I never used to take the time to do breakfast other than cold cerial or toast. I then realized the importance of getting my kids off to a good start with a balanced, more high protein breakfast, then we started SCD and the cold cerial and toast were out. Most of the things I have suggested takes about 5-10 min. to be ready to serve and my family loves them. I hope this helps you. If you want spacific recipies let me know. Sandy M. Guest guest
Hi Randy, I am a dad (yet not single/but wanted to share)....we all started SCD 3 weeks ago as a family...I never thought I would be cooking so much in the kitchen....my attitude is slowly changing...I am learning how to cook for the first time....hang in there....it is worth it when you feel better...and you see your sick kids have the brain power to finally come out of neurological disturbances, behavior problems and in three short weeks already seeing improvements in their delays! Die off was horrible for me and a big surprise it was so bad.........but I told my wife that I would be with them........she was originally going to do the SCDiet without me........I am already feeling more energy and able to concentrate better! LOL It is wonderful to have the support of both parents especially with three kids and both of you standing to benefit from SCD and in fact, already doing so. I am positive your family's excellent progress is a major inspiration to many on the list. Carol F. SCD 6 years, celiac
