Jody,

That web page told me how to make yogurt from progurt culture. But

did not answer my question.

I was wondering if I could use PROBIOTICS instead of progurt. Also, I

was wondering if using PROBIOTICS on coconut water will make it

legal? Instead of using the coconut kefir culture which contains both

bacteria and yeast?

It is my understanding that you have to have L. Bulgaricus and S.

Thermophilus to culture the milk into yogurt.

If you are wanting to culture things using something else, I am sorry

but I do not have that information.

I've never cultured anything other than following Elaine's directions.

Thermophilus to culture the milk into yogurt.

If you are wanting to culture things using something else, I am sorry

but I do not have that information.

No, you can't use probiotics instead of yogurt starter. It doesn't

have the proper balance of bacterial cultures to make yogurt.

Do you mean green coconut water? You may be able to make coconut

yogurt with legal yogurt starter and homemade coconut milk *but*

green coconut milk is illegal no matter what is added (kefir

starter, yogurt starter or probiotics).

If you add probiotics to homemade coconut milk you'll have coconut

milk with probiotics in it - not yogurt.

Hi ,

To make a true yogurt you need S. thermophilus and L. bulgaricus in

the yogurt starter. Incubating the milk for 24 hours with these

starters will ensure that all the lactose has been broken down. L.

acidophilus or L. casei can be included in the starter.

If you don't use the proper strains you run the possibility of having

an incomplete fermentation.
