Sometimes. It depends on how it is cured. If you find a butcher

who will do it for you you could specify what ingredients you want.

I believe the Maple Leaf does have nitrates. We only use it once a

week or less, with OJ.

Do you serve bacon occasionally as a treat or is it a staple in

your diet? Trying to learn as much as I can before starting this

diet. I live in Canada so I'll be sure to look for the Maple Leaf

bacon...
