Re: nut butter recipes

Thanks. Now, I haven't been paying attention to the nut butter recipes,

and assume I can make my own with almond flour.

If anyone has easy, tried and true nut butter recipes and is able, please

send them to me offlist in their entirety. I won't have access to my

friend with internet till tomorrow.

P.S. Can we trust commercially prepared nut butters, like Trader Joe's,

that just has salt and/or peanuts listed?

Fay,

You can make any recipe that call for nut flour with nut butter.

Use the same amount of nut butter as nut flour.

We use Maranatha organic peanut butter because we like the taste

better than any of the other brands.

I just searched out a brand called Futters and of course, Marantha that look

typically like

the kind we use. You can grind your own at Whole Foods or HFS. (Health Food

Stores)

BTW: Will you be using blanched almonds for your homemade nut flour?

Make sure cashew butter is not from roasted cashews unless you can check to see

that no

starch has been added.

I was going to buy legal flour; I have some and may try to make butter

out of it in the food processor. I'm just not sure about adapting

recipes.

The recipes do not need altered in any way.

Use the same amount of nut butter that you would use not flour.

Thanks. The two recipes I would most use are the cheese crackers in what

I think of as the other Lucy's cookbook, the one with the Indian recipes,

and blueberry muffins from the Grain Free Gourmet. I think the first

should be fine with the butter, and we'll see about the second. Take

I think you are referring to Raman's cookbook (the one with Indian

recipes). I don't have the Grain Free Gourmet cookbook yet. So, I

haven't tried any of those.

You may wish to add a tiny bit of oil to get the consistency similar to store

bought nut

butter.
