I'm looking for some help in making this recipe with coconut flour and no eggs. Anyone? Trying to make that many changes to an existing recipe is very difficult because coconut flour has different characteristics than wheat flour. I would probably start by trying to make muffin tops. They would cook through more easily and I just think you'd have more success with making a recipe that would work. Are bananas okay? Thanks! > http://brunch.allrecipes.com/az/syMrningGlryMffins.asp Here is a recipe from the internet that may be easier to convert since you start with less illegals, (I made some suggestions in parenthesis): " Honey Muffins This is a basic coconut four muffin recipe you can use to make a variety of muffins. 3 eggs (maybe applesauce or one of the egg substitues at http://pecanbread.com/recipes.html ) 2 tablespoons butter, melted (or coconut oil?) 2 tablespoons homemade coconut milk 3 tablespoons honey 1/4 teaspoon salt 1/4 teaspoon (SCD legal) vanilla 1/4 cup sifted coconut flour 1/4 teaspoon baking powder Blend together eggs, butter, coconut milk, honey, salt, and vanilla. Combine coconut flour with baking soda and thoroughly mix into batter until there are no lumps. Pour batter into muffin cups. Bake at 400 degrees F (205C) for at least 15 minutes. Makes 6 muffins.
