hi, Marina,

If you are far enough along in the diet, you can substitute prepared

(soaked and cooked) navy beans for nuts. Don't skimp on the honey,

though, because otherwise they will taste beany. I put all the liquid

ingredients in the blender, then add the beans so the muffins are

lumpy. They take forever to cook, and I then leave them in the oven on

low (150 degrees F) for an hour or two to make sure the middle is fully

cooked. The carrot cake made into muffins is my favorite from BTVC.

The regular muffin recipe with beans is also very good.

Marina,

The banana pancakes and the sneaky veggie pancakes could be prepared

silver-dollar sized and would make good snacks.

When I cook with coconut flour I forgot to tell you I always add one banana per

one cup of coconut flour....I have had lots of success this way...oh and add an

extra egg.....it takes longer to cook a 9 by 9 cake 350 for 40 minutes! Here is

one of our favorites:

KiKi's Cake (I just invented...knowing my luck somebody else already has....it

works!)

2 Bananas and 6 strawberries (puréed)

1/2 cup honey

2 eggs

1t baking soda

2 cups coconut flour (real fine like dust)

1/4 cup shortening or butter (what ever you tolerate best)

Mix, put in 9 by 9 cake pan...cook slow 350 for 40 minutes WE LOVE IT!
