Hi Kim,

We have been buying bags of 100% pure coconut that is SCD safe (with nothing

added like sugar or corn syrup etc....God knows they can find anything to throw

in to screw things up for us!) throw it in the food processor until fine like

flour.....and walla coconut flour! Just like magic! Just joking...I HAVE BEEN

INTERCHANGING IT WITH THE NUT FLOURS.....SINCE we are not ready for nuts yet

seem to tolerate a little coconut. Yet to be honest...we are not eating much

baked goods, cookies, pancakes or anything yet (too early from what I am

told...and paid for it when we tried last).....we probably will never eat a lot

of that stuff again anywat...just not that healthy.

Re: Antoinette/: nut-free flour????

Hi Antoinette;

How do you make the coconut flour?

Thanks,

Kim

What do eat for breakfast, instead of cereal, toast, or muffins, what do you

eat. And lunches, no sandwiches?

What do you put in a bag lunch instead of a sandwich, muffin, or biscuit or

roll of some kind??

I'm looking for ideas, please.
