Dry Curd Cottage Cheese

Hi All,

I am attempting to add more variety to my SCD and am looking for a

local source for Dry Curd Cottage Cheese. Is there anyone on this list

from Ohio and have you found a source? Because this cheese is known by

various names and one manufacturer's definition may be different than

anothers, what do I tell " the cheese lady " at my local health food

store regarding specifics about the cheese other than whats listed on

pg. 286-7 of BTVC. Any help would be appreciated.

Farmer's Cheese, dry curd cottage cheese, here one dairy makes a 4% DCCC known

as

baker''s cheese.

here is a website for a very legal cheese that you could look at and secribe the

packaging

to your cheese lady.

Western Creamery Brand Pressed Dry Cottage Cheese (0.1% MF) It comes in a white

square

vacuum pack with blue and brown lettering and a circle logo. Packages are 500

grams.
