The recipe (my book is the 9th edition -- apologies if it was updated in the 10th) only says to go to a firm ball stage -- would love to just use my thermometer instead of the ball method. My instant-read thermometer doesn't have those markings, but I just looked it up in a cookware store while I was running errands -- For those of you who were dying to know, the Firm Ball stage is 248 degrees F. Marina Re: lollipops Carol means if you use a " candy thermometer " it will tell you what " firm ball stage " is...on one side it will have the temp and on the other it will say the various stages of candy making.
