trying to recreate turkey deli meat

My son really loves turkey deli meat. I am going to assume that one

does not exist that is SCD legal (we are kosher too, to make it more

complicated). Is there any way to trick my super picky son into

thinking he is eating turkey deli slices. Can I just roast a turkey

breast and use a meat slicer? Will this have the same consistency?

How are deli meats made (the ones that are not loaded will junk?)
