Guest guest
Has anyone heard of Francis Simun, a bakery in Dallas that bakes bread out of pretty much anything? I just looked on their website and found some artichoke bread. Has anyone tried this? (I'm verifying now that this is not the illegal type of artichoke). Thanks, Angie
Guest guest
Angie, They sell so many things made from illegal ingredients, I don't see how you could avoid the issue of cross-contamination. Flour floats in the air and gets on everything. It's an interesting idea, but I just don't see how they could make legal products with so many illegal flours in the shop. Guest guest
I used Francis Simum's bakery several years ago for my son, CFGF at that time. I even went to tour the bakery, and even met him. RED FLAGS: 1- all the different types of flour looked the same(off white) 2- my son had that same " glassy eyed, like he was in a 'nod', too satisfied " look when he ate the supposed gluten free products, and they tasted the same 3- when I used www.specialfoods.com products, the flours all looked different, cooked different, and tasted different, like you'd expect. My son improved. 4- others had suspicions also I don't know if he was diluting or mixing in white wheat flour, or what. Because there are now many who sell different types of flours, perhaps he has tightened up his ship, so to speak. Guest guest
Yikes! Thanks for all the warnings. I'll see what they say, but I think I'll stick to my bread from digestivewellness.com for now.
