So, clover honey tastes different than orange blossom honey, etc. Whichever one you like the best is the one that is the best for you. As long as it is pure honey, the variety makes no difference. I saw some postings in the past about buying raw honey and putting it in a pressure cooker? Since there is risk of Clostridium Botulism growing in raw honey for those who have not developed their blood brain barrier yet (generally around 2yrs old) I have been hessitant to give it to my daughter. The honey should also be clear. If cloudy, it will still have pollen which is irritated to an injured gut. The taste is dependant on what flowers the bees pollinated. Often darker looking honey is stronger tasting. Some honey are blends of a number of honeys. So the best honey is what is (a.) legal and (b.) tastes good to you. In the recipe it states that the honey should be sterilized in a pressure cooker. The pressure cooker, used properly, will kill any microorganisms that can not be killed by ordinary heat.
