In our cooking class we dredged zucchini spears in parmesan and fried it. Also try making beet Chips, or baking lots and lots of mushrooms sprayed with oil. (They shrink a lot) Carol F. They are a combination of vegetables made like potato chips but contain illegal vegetables. We can still make crisp chips from legal veggies like squash, carrots and beets. I have a mandoline, but it doesn't get them paper-thin, just about 1/8 inch thin. This has been a problem with squash chips, I'm still not able to get them quite thin enough. I had seen the Terra beet chips and was thinking that I could just pick out the beet chips for him, but I am wary of processed foods. I would love them if they were safe, mind you, but our experiences with processed foods are like yours with pineapple juice ... corn hides everywhere as an undeclared ingredient and my son is very sensitive to corn. Celeriac is an advanced food. Don't use the beets from the Terra Mix. they may have been dusted with starch. I slice my veggies on a Borner V Slicer.
