I have a mandoline, but it doesn't get them paper-thin, just about 1/8 inch thin. This has been a problem with squash chips, I'm still not able to get them quite thin enough. I had seen the Terra beet chips and was thinking that I could just pick out the beet chips for him, but I am wary of processed foods. I would love them if they were safe, mind you, but our experiences with processed foods are like yours with pineapple juice ... corn hides everywhere as an undeclared ingredient and my son is very sensitive to corn. I wonder if we could make chips from celeriac? I might try them too. Suzanne Glad to find something for you. peel beets and slice very thin. You can lay them on parchment paper and spray with oil, then bake until crisp or fry them just like the sqaush chip recipe on Pecanbread. Add salt after. Remember Terra Chips? They are a combination of vegetables made like potato chips but contain illegal vegetables. We can still make crisp chips from legal veggies like squash, carrots and beets. The alternative was for him to eat only beets and elk or only asparagus and buffalo for 2 days straight, which does strange things to his stools. He does better on celeriac than without it.
