There are other snack things to make with veggies. In our cooking class we

dredged

zucchini spears in parmesan and fried it. Also try making beet Chips, or baking

lots and

lots of mushrooms sprayed with oil. (They shrink a lot)

Beet chips! Can you give some tips on how to make them?

This would give us a finger food that Tom could take to preschool

(right now there's nothing in his diet that he can take as a finger

food, so he just goes hungry while the other kids eat).

This would be wonderful...

This is great, thank you. I will try it this weekend. How thin do

the slices have to be? I have a mandoline, but it doesn't get them

paper-thin, just about 1/8 inch thin. This has been a problem with

squash chips, I'm still not able to get them quite thin enough.

I had seen the Terra beet chips and was thinking that I could just

pick out the beet chips for him, but I am wary of processed foods. I

would love them if they were safe, mind you, but our experiences

with processed foods are like yours with pineapple juice ... corn

hides everywhere as an undeclared ingredient and my son is very

sensitive to corn.

I wonder if we could make chips from celeriac? I might try them too.

Glad to find something for you. peel beets and slice very thin. You

can lay them on parchment paper and spray with oil, then bake until

crisp or fry them just like the sqaush chip recipe on Pecanbread.

Add salt after.

Remember Terra Chips? They are a combination of vegetables made like

potato chips but contain illegal vegetables.

We can still make crisp chips from legal veggies like squash,

carrots and beets. Adults like to sprinkle some herbs on them as

well like basil.

Hi Kelli,

line?

Fried carrot curls aren't on the intro but after you have added in

some other foods you could try a little of the carrot curls and see

how you are with them.
