It says to cook the soup for 2 hours and then take out the solids and cook it three more hours uncovered. Can anyone explain why it would be done this way? Am I reducing the volume to enhance the flavor by cooking it 3 more hours? It isn't getting any more nutritious during 3 more hours of cooking if I have taken everything out, right? No need to cook them any longer - especially if you wish to eat the chicken either alone or in the soup later. The second cooking without the lid reduces the soup and concentrates the flavour.
