soup method question

I am making the chicken soup in Grain-free Gourmet. It says to cook

the soup for 2 hours and then take out the solids and cook it three

more hours uncovered. Can anyone explain why it would be done this

way? Am I reducing the volume to enhance the flavor by cooking it 3

more hours? It isn't getting any more nutritious during 3 more hours

of cooking if I have taken everything out, right? Why don't I just

leave everything in it and cook for 3 more hours? Thanks for any

expertise!

Hi

After the first bit the chicken and all the rest are cooked.

No need to cook them any longer - especially if you wish to eat the chicken

either alone or in the soup later.

The second cooking without the lid reduces the soup and concentrates the

flavour.

you take the solids out earlier, they won't all apart. If you keep them
