I cooked and pureed a big batch of carrots for those first few intro days. I thought I’d try to make a jelly for “pancakes” with some of the carrots, Welch’s purple grape juice and some honey. It turned brownish and looked unappetizing as jam. Looks great as a BBQ sub though and my kids are dippers! I cut an onion in half and put one of the halves in the pot and cooked it all down, removing the onion at the end. Here are the approximate quantities: 1/3 cup pureed carrots, ½ cup purple grape juice, 2 TBSP honey, ½ an onion. It didn’t make very much so I’d double it the next time. The test will be if my kids will eat it. It does taste palatable though.
