Guest guest
Great recipe! I just used the KiKi's cake recipe as shown below, but made them as cupcakes instead. 350 degrees for 30 minutes -- they're pretty soft, could possibly use another five minutes of baking. They're very yummy -- will be sending them to school for snack! Thanks, Antoinette! Marina SCD day 8 Re: What are your favorite nut-free treats? When I cook with coconut flour I forgot to tell you I always add one banana per one cup of coconut flour....I have had lots of success this way...oh and add an extra egg.....it takes longer to cook a 9 by 9 cake 350 for 40 minutes! Here is one of our favorites: KiKi's Cake (I just invented...knowing my luck somebody else already has....it works!) 2 Bananas and 6 strawberries (puréed) 1/2 cup honey 2 eggs 1t baking soda 2 cups coconut flour (real fine like dust) 1/4 cup shortening or butter (what ever you tolerate best) Mix, put in 9 by 9 cake pan...cook slow 350 for 40 minutes WE LOVE IT! Especially KIKI! Antoinette (SCD entire family day 26 and doing much better today! ASD ADD ADHD and more)
