I have created a recipe that likes that you might possibly call a

noodle. I don't want to build it up too much, because it might not

fit anyone else's definition of a noodle, but we are really excited

over here. :)

's Chicken Noodles

1 raw chicken breast

2 eggs

1 cup almond flour

3/4 t. salt

3/4 t. pepper

3/4 t. paprika

water to thin

Oriental variation:

Eliminate pepper and paprika. Add minced garlic and ginger root to

taste and possibly some SCD legal tamari sauce (which I don't use, but

I think sounds really good.)

Prepare the baking pans. I grease with coconut oil and use muffin-

crown pans (fills 6 muffin crown spaces--one pan), but I'm sure you

can experiment and use something else. Put chicken breast in food

processor and chop well. Add eggs and blend. Add seasonings and

almond flour and blend again. You will now have a batter that does

not have any sign of chicken bits in it. Batter will be thick. At

this point I add some water little by little, blending each time

until the batter is more or less pourable. I'm not sure how necessary

the water is, but it just makes it easier to get the batter into the

muffin pan. Bake at 350F for 15 minutes. I test doneness by pressing

my finger on top and see if it seems firm. Muffins will puff up, but

later will sink when they cool. That's ok! You will remove the

muffins from the pan and slice them (julienne) thinly with a sharp

knife. I only slice up what I think we will eat and refrigerate the

rest as muffins. They are a bit drier as left-overs. I have not

tried to freeze them yet.

These " noodles " look somewhat bread-like, but more moist, like a

cooked noodle. They are a broad noodle shape. likes them plain,

or put in chicken soup. He also likes to just eat the muffins. I

tried some of the " noodles " with tomato sauce and thought they were

really good.

I think this recipe is suitable for lots of variations, but I've

tweaked it as much as we need here. We are happy! If you see

improvements you want to make, go for it! I hope there are others who

like it as much as we do.
