Guest guest Posted March 17, 2006 Report Share Posted March 17, 2006 Hi everyone, I need to send nut-free snacks in for my son, who has a nut-free, seed-free classroom. I'm hoping to be able to find a group of yummy baked goodies to send in with him. I'm thinking about baking with coconut flour, which someone suggested. So far, every recipe I've converted to coconut flour has bombed -- the coconut flour is much drier than nut flour, I think, so it just crumbles. I tried adding extra liquid (butter, honey) but haven't succeeded. Any good coconut-flour based cookies, bars, or muffins out there? I know I can make macaroons. I also know there was a nut-free cupcake recipe posted, and I'll give that a try. I don't want to use meringues, because the snack needs to be substantial enough to tide him over until a late lunch. I know I can send fruit, cheese, etc. -- I just want to rotate in good baked things also. All recipes welcome!
