From Elaine's web site:

>Some starches have been shown to be tolerated, particularly those in the legume

family

(dried beans, lentils and split peas only). However, they must be soaked for

10-12 hours

prior to cooking, and the water discarded since it will contain other sugars

which are

indigestible, but which are removed in the soaking process. Small amounts of

legumes

may only be added to the diet after about three months.

Angie-

I rinse my lentils and then boil them for about 30 minutes. I do this when I

am making homemade lentil soup. You may want to put less water with yours and

cook them until they are softer and a little more mushy.

Hope this helps.

Hi Angie,

Soak lentils 8-10 hrs or overnight. Drain and throw away water.

Rinse the lentils. There are then ready to be cooked in your recipe.

Have fun with the new recipe.
