OT/ how to get nonstick results without Teflon?

Could anyone tell me how you fry eggs (neatly) without using a Teflon

pan? I really want to stop using ours, but my daughter likes eating

all kinds of omelettes and other " structured " egg creations that won't

work if they stick. What kind of oil and pan do you use? (We don't do

butter here.)
