Lower the temp in the oven to warm or about 200 degrees. Put the cookies back into the oven once it has cooled down. Leave the cookies in the warm oven for an hour and check on them. Continue to check on them until they reach the texture your son likes. Nuts are moist and it's difficult to get a cookie to come out crunchy to start with, but this method will slowly dry the cookies out and make them crunchier without burning them.
