Hi everyone

I held my first SCD, egg free, dairy free, nut free Birthday party two

weeks ago for my daughter turning two and it was a success. It was a little

stressful finding out just a week before that my BIL and his wife were flying in

and three people who said they couldn't come ended up coming with only 2 days

notice and my uncle (with the autistic son, 2 daughters and wife) canceling the

day before, ugh. I made it through making everything from scratch for over 20

people.

My mom and I experiment with the cake for weeks ahead of time and she was

very kind to make the actual 3 layered birthday cake for THE day. It is

probably similar to Kiki's cake but minus the eggs plus a few things to sub for

the eggs so we can call it " Kayla's Cake " since that's what we call her. Here is

the recipe.

1 C Coconut Flour

1/2 t Baking Soda

1/4 t Vitamin C powder or lemon juice (optional, reacts to B.S. and cause

more rise)

1 1/2 C Banana Puree (about 3 bananas)

2 T Coconut oil melted

3 T Honey

2 T Carbonated Water

Pre heat to 325. Grease 9 in round cake pan with spectrum palm oil shortening.

Mix all dry ingredients together. Mix all wet ingredients minus the carbonated

water. Mix dry and wet together well. Finally add the carbo. water. Bake for

45 minute. This makes one layer, about 8 slices.

For in between layers:

Boil sliced strawberries with no water. Bring down to medium heat. Add desired

honey and mash. Cook until spreadable.

For frosting:

Whip spectrum shortening, honey, and vanilla. We don't know measurement since

we just added until it tasted right. Ended up with a lot of vanilla (make sure

it's legal brand).

My mom dug in the frosting on top of the cake " Happy B-day a " and put

in strawberry filling. It looked great and tasted great. Even my grandfather

(the one who tried to put cheese and crackers out at our last b-day party GFCF)

said that it tasted really good.

I have to mention though. Coconut flour is too early for us. I think it is 6

months symptom free. My daughter's digestion problems cleared right up with SCD

so I thought she would be fine. She ate 3 pieces in two days and pooped the

cake out untouched and hasn't been digesting any veggies ever since, although it

might be the 5 month regression. My son has excellent ability to detected what

might bother his system (which is why he hardly ate anything preSCD). He was so

excited about the cake, but then only ate two bites before quickly getting down.

He knew better.
