Guest guest Posted February 26, 2006 Report Share Posted February 26, 2006 Great thread! Our freezer is packed with SCD food. We're considering getting another freezer. When veggies/fruit are in season we buy them from farmers in bulk when they're at their cheapest and keep them either in large canning jars or plastic baggies in the freezer. (I prefer using glass though.) We have mostly cauliflower in there as I find it useful for so many things... like a potato replacer. (I actually finally figured out that potato contributes to headaches for me but love mashe potatoes with gravy esp. in the cold winter months with a nice roast chicken or roast.) As you can see, we are not strictly SCD anymore but I stay here because we are still mostly SCD just because we feel better. One of the things I found out was that I actually prefer using cauliflower like potatoes and don't care for potatoes so much anymore (part of the reason may be that we don't use butter because my daughter doesn't do well with cow dairy and goat butter is too expensive). I also use the cauliflower to thicken sauces, gravies and stews which we have often in winter... and so it means we need to keep a fair stock of it. Lots of tomatoes too for juice (we juice a lot) and soup and salsa dip. I would store salsa dip but it doesn't seem to matter how much we make, everyone eats it until it is done! This is a wonderful event in our house because my son (who is the biggest eater of salsa) could not (previous to our SCD year) handle digesting any nightshades, so I'm not complaining at all. We keep some broccoli too... maybe 12 large bags to get us through winter as we don't consume as much of it. We buy frozen peas and carrots on sale and my favourite french cut green beans. Cabbage keeps rather well if just kept cold but after all the wonderful fermenting threads... I think I'll keep some of it on hand that way too. I like to always make sure that there's some fresh cabbage in the house to juice a bit of it as it's healing properties are really phenomenal... whether it's juice or part of the soup broth that is kept on the stovetop all winter long... There are many articles out there on the benefits/healing qualities of cabbage for anyone interested in reading more on this... we have found that it really does apply to our family quite well for all different symptoms... whether it be headaches or diahrrea... it seems to really help get the gut cleaned out in our case. Lots of meat of course... spaghetti sauce in jars... hamburgers (half meat/half ground veggie pulp left over from juicing)... roasts and ground beef/pork that was on sale. That's it for us for now.
