ICE CREAM

Freeze loaf pan in the freezer before placing the mixture in it.

4 eggs, separated

2 egg whites

pinch of salt

1/4 cup oil

1/4 cup honey

2-3 tsp vanilla

5 frozen strawberries

Beat 6 eggs whites with salt until stiff.

Gradually add the 4 yolks, the oil, honey, vanilla and strawberries.

Freeze.

I, if I were you, would bring foods to share with others that your

child can eat that the first birthday party that is being shared with the

cousin.

DS' b-day is April 13 and we will be having 2 parties. One on

4/1w/my IL's that he will share w/his cousin who's b-day is 4/1. The 2nd

party will be 4/15 with my parents/friends.

The first party is the one I'm more worried about b/c it's a shared

party. The 2nd one I will be providing the cake, snacks, etc. so I can

choose whatever it is. I'm not sure about the 1st. party (I need to

contact my SIL about it).

any ideas? Thankfully he isn't much of a cake eater, but he does love

ice cream. I try to buy him the rice milk ice cream b/c he isn't

supposed to have dairy. Any opinions on that?

Esther Weiss's cookbook (available through Digestive Wellness), and it

stays soft for weeks so you can make it early. Take care, Fay
