I Am in the process of controlling my T-2 diabetes and have to be on a low carb diet. The kicker is, I Am a vegan, yet the pecan bread has eggs in it... ;-) I have engaged a personal chef who also is a baker to assist me in this. She will prepare the normal recipe for me and then proceed to try and figure out how to make this recipe vegan. Anyone else on the list vegan?? I must say that it does appear that my blood sugars (bs) are under control since being on this diet. I love nuts, so I will have to watch the amount I eat of the bread because the weight will pile on for sure. I plan to make pretzels out of the pecan flour as well (btw I make it myself with organic pecans and with an electric coffee grinder, that way I control the quantity and freshness too). I have checked out the web site and recipe list, and will try some of them which I can convert to vegan style. I must not have any corn or peas as well... yum, yum some of my favourites too! ;-) Thank you again and I welcome anyones input for sure.
