COCONUT MILK

1/2 cup unsweetened coconut flakes

1/2 cup boiling water

Blend together until coconut is finely ground.

Strain through a fine sieve or a piece of clean muslin.

Squeeze to extract all the liquid.

Makes about 1/2 cup
