Aack! I'm feeling boxed in here ...

Nut-free/seed-free classrooms mean I can't send in muffins, cookies, etc. baked

with nut flour.

Moved to coconut-baking (KiKi's cupcakes, etc.) and this worked great. But, if

coconut isn't allowed early on, what do I do?

Beans also suggested, but I know those are only for later in the diet. I'm

already sending in tube of HM applesauce, yogurt with fruit, etc. -- but are

there any good baked items that are nut flour, seed flour, coconut flour free?

Coconut flour should not be used until later in the diet. See " The Stages. " I

If you are able to process the coconut into " literal flour " KiKi is able to

digest it...or at least shows none in poop undigested or signs of distress. The

problem is....some processors can't do this....I have two, only one can make it

this fine. I gave her some in the beginning that was not " fine " and yes, she

could not tolerate it (so agree there about it not being a early stage

food...but now wonder if it isn't in the processing?)....with it more " whole

flakes " saw it undigested in her stool and caused her diarrhea. Food for

thought...knowing that what worked for us...may not work for all.

I hear you -- it's just that coconut is OK based on the food allergies in my

son's classrooms. These are fifth and third-graders, not little ones, so I want

to be sending in age-appropriate snacks. What works well are healthy baked

cookies and muffins (to rotate with yogurt, applesauce, fruit, etc.) and I like

having something substantial enough to tide them over until lunch. (the problem

with things like meringues are that they're pretty much like eating air !) So,

if I can't bake with nut flours, ground-seed flours like pumpkin seed or

whatever, or coconut flour -- are there any other good recipes out there?

I've been using the coconut flour from Digestive Wellness -- I haven't seen any

negative results, but don't want to mess up the diet. Any advice on this is

welcome.
