Guest guest Posted March 4, 2006 Report Share Posted March 4, 2006 This is a very stable bread - doesn't crumble or break very easily. I make pb & j and grilled cheese sandwiches with this. HTH, Eileen Cashew Butter Bread 1 cup honey 18 oz. cashew butter (approx. 2 cups) or 4 cups cashew flour 1/2 cup oil 1 1/2 teaspoon baking soda 3/4 teaspoon cinnamon 10 eggs In a food processor, mix the cashew butter and honey. Add oil, baking soda, and cinnamon. Mix in the eggs. Bake @ 275 degrees for 1 1/4 hours. Place parchment paper in 2 loaf pans (9”x5”) before placing batter in the pans. Makes 2 loaves. Variations: (1) You can also replace up to 2/3 of the honey with pureed winter squash/pumpkin. (2) Replace cinnamon with 4 tsp. vanilla for cupcakes. (3) Leave out honey and cinnamon; add salt.
