Guest guest Posted February 5, 2006 Report Share Posted February 5, 2006 Hi folks, Let me preface this by saying that a baker I am not. My fourteen date cake turned out terrible. The middle did not look like a cake, There was some clear jelly like stuff in the middle (Was this the folded eggs whites?). When I folded the eggs whites in it did not seem to mix well. Can I just stir it or should I fold it in for a longer period of time. Also, how dark is the cake supposed to be! It felt firm to the touch, but the middle did not have a cake like consistency! It tastes great though! Please help. On a side note, my son has been on the diet for two days. He has always had trouble brushing his teeth (ei getting each side of his mouth). On day one he could remember each part that he needed to brush. He also has not been hungry all day. He used to want a snack through out the day. He has also feels warmer. He used feel on the cold side all the time. I suspect he has an auditory processing disorder, it is too young for a diagnosis. I will keep everyone posted! Help me make a better date cake! Were the egg whites stiff when you gemntly folded them in and turned the spatula enough times to completely assimilate them? Did you bake it ,long enough?
