I'm a newbie. but i just made my daughter coconut chicken and she ate two helpings! I just cut up the chicken breast nugget size, put in in an eggwash then into a bowl of unsweetened shredded coconut. I fried the nuggets on the stove in coconut oil then made a dipping sauce of honey and mustard. you could also add some mango or a little orange zest to the sauce. you could also substitue shrimp for chicken if it is tolerated. my daughter loved it and i didn't think it was half bad myself! definately one we will mark as a keeper. joey Quote Link to comment Share on other sites More sharing options...
