It's nut free High in protein and calcium Vegetarian Can easily be Kosher Can be used early in the diet Can use organic produce and organic DCCC and even " grass fed eggs It is tasty It's easy It's good if you are like me and can't handle simmered down concentrated tomato sauce I posted the nutrition info in case you want to enter it into Fitday Zucchini Lasagna 1/2 cup dry curd pressed cottage cheese 1 egg 1 zucchini, peeled and cut in strips with a veggie peeler 1/2 cup tomato juice basil, oregano and fresh minced clove garlic salt and pepper 1 oz. slice favorite cheese. ( i used Jarslberg) 1 tablspoon home grated Italian Parmesan cheese Preheat oven to 350-375 Spray a loaf pan with vegetable oil or Pam Combine egg and dry curd cheese and mix by hand or with a beater. Add spices. Spread half the zucchini in pan, add cheese mixture, remaining zucchini and add tomato juice. Add chees slice and garlic and Parmesan and spray lightly with oil. Bake 45-60 minutes.
