Guest guest Posted March 19, 2006 Report Share Posted March 19, 2006 Hi Mel, When I substitute coconut flour with nut flour (since it is dryer) I substitute one banana per one cup of coconut (it may take longer to bake) so check with toothpick often (possibly even lowering temp)...Having great success doing this. We can't digest nuts to easy yet...I like to turn the coconut flakes into " dust " like consistency with my food processor...this way we can hopefully digest it easier...haven't seen it in the poop undigested....I think this is a good sign. When we gave up hope with our GF CF SF experiments.....and committed to the ways of the SCDIET with no cheating....we started to see the TRUE changes that started to take our breath away.....our 22 month old ASD daughter has finally started to talk, play, smile, interact etc etc! Before got relief...but nothing like this! I have celiac disease that did not respond well to GF CF and even the starch in my pills where keeping me sick....for the first time in months, instead of loosing weight I am gaining...and chronic fatigue and depression is lifting! My husband's ADD is easing up for first time in his life....my son ADHD and rage attacks are easing up....even our adopted daughters neurological problem with hyperekplexia related to cerebral palsy...is doing better....this SCDIET is a God send and to think we are only on day 27.....have much more healing to do.....but healing takes time.... Juice Hi, everyone, Well, so far I have removed milk and gluten from the kids' diets and there have been some slight improvements. Hard to explain...it's a subtle change, but it's only been a couple of weeks and we're not even completely SCD yet! I'm still expiramenting with SCD bread recipes. I need to find a good bread and a good waffle/pancake recipe before I try going completely SCD. I have collected tons of recipes, it's just a matter of trying them all. I also have a few questions: 1. Coconut - can this kind of flour be used in place of the nut flours in any recipe here? Do I have to adjust the baking soda or anything like that? Also, how does one make coconut flour...should I toast the coconut and then process it? 2. Juices...I have a juice machine...never used it. I was wondering about other flavors of jello. Does anyone have any other suggestions besides Welch's grape juice to flavor the gelatin. Well, that's about it for now.
