I use brown rice flour, sorghum flour, buckwheat flour, and almond flour in may case, though I'm living without the last few days an ddiscovered I can. In teh morning, to replace toasts, I make my own kind of cookiish flatbread thing to eat with eggs. I don't measure, but you go by taste. I mix usually sorghum and rice flour together for maybe teh equivalent of 1 1/2 cups, 1 egg, salt and enough olive oil to help bind together.. I cook that in a pan while the eggs fry in another pan. I end up with a ball that I squish in teh pan, flipping a few times It,s kept me happy so far Since you're aiming for cookies, I assume you'll end up adding honey or fruits.
