I used Splenda and Land O' Lakes Margarine in the cookies, according to the kids, came out " awesome " . Tim stopped by before and tried one and couldn't tell the difference. My stomach is still wishy-washy, so not going to attempt them just yet. Actually, it's probably safer to bake this way, no tasting. : ) Just thought I'd let you know about the butter cookies with Splenda in case any of you are in that baking mode. Not a pretty sight. Was extremely careful. Used nothing electric with the exception of the oven and have heavy duty Pampered Chef pot holders so I was well protected. Guest guest Posted December 7, 2002 Report Share Posted December 7, 2002 Hi Cindy Lou: Butter Cookie Recipe is as follows: 1 cup of butter ( I usually use margarine) 1/2 cup of sugar (Splenda) 1 tsp. of vanilla extract 1 egg 2 1/2 cups of flour 1/4 tsp of salt (I never use it) Cream butter, sugar, vanilla and egg. Gradually add flour and salt. You can either use a cookie gun if you have one or you can roll out the dough with flour Bake 375 degrees 12 minutes Makes approximately 80 cookies. Hope you enjoy the recipe. Sometimes I'll split the batch and put food coloring in it. I've made green christmass trees. I've also braided the dough into little wreaths and had them half green and red. That was when I was ambitious and had no children I had to worrry getting dough stuck all over the place. They suggested 3/4 cup Splenda mixed with 1-2 tbs SF maple syrup. She also sent me a couple of recipes for almost SF pumpkin pie and banana bread. If anyone would like the recipes, just email me. Guest guest Posted December 8, 2002 Report Share Posted December 8, 2002 I got sugar free maple syrup at Cracker Barrel that is SO wonderful!!! Tastes like REAL maple syrup. Not as thick, but it is really tasty. I will have to try the brown sugar with Splenda idea. Last night we had our support groups Christmas party, and they order a sheet cake from a local bakery that was sugar free. It was SO good! I am gonna have to beg them to tell me what they used. But it is great to know that for special occasions I can get a sugar free cake now.
