Guest guest Posted December 8, 2002 Report Share Posted December 8, 2002 Banana Holiday Bread 1 1/2 Cups all-purpose flour 2/3 Cup Splenda Granular 2 Tsp. baking powder 1 Tsp. baking soda 1/4 Cup no-fat sour cream 2 Tsp. vegetable oil 1/4 Cup fat-free milk 1 Egg or equivalent in egg substitute 2/3 Cup mashed banana 1 Tsp. vanilla extract 8 Maraschino cherries, quartered 2 Tbsp. mini chocolate chips 1/4 Cup chopped walnuts Preparation 1. Preheat oven to 350 degrees. 2. Spray a 9-by-5-inch loaf pan with butter-flavored cooking spray. 3. In a large bowl, combine flour, Splenda granular, baking powder and baking soda. 4. In a medium bowl, combine sour cream, oil, fat-free milk, and egg. Stir in mashed banana and vanilla extract. Add sour cream mixture to flour mix. Mix gently just to combine. Fold in cherry pieces, chocolate chips and walnuts. 5. Evenly spread batter into prepared loaf pan. Bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean. 6. Place loaf pan on a wire rack for at least 10 minutes. Remove bread from pan and continue cooling on wire rack. Cut into 8 thick slices.
