Guest guest Posted December 21, 2002 Report Share Posted December 21, 2002 I used Spenda to make cranberry relish, I think it's called, with the cranberries and fruit and nuts, and it cooked up fine, and it actually was the best I ever made. I've done it a couple of years now, and everyone loves it! I use a little less than the " real " sugar equivalent, and a little less water (I like it pretty thick and chunky). Cook like normal. I've also used it in making an apple/fresh cranberry/walnut salad (close to Waldorf, but not quite, LOL) that everyone likes. And sometimes, to jazz it up, or make it a little more like dessert for me, I might cut up some sweet oranges/tangerines or add a glug of Grand Marnier (after cooking and cooling if you want the alchohol to stay put) for something different. I take a couple of tablespoons of this in a tiny plastic container to work to eat after my leftover Turkey sandwiches (on whole wheat, with soy cheese) and it is a great dessert!!! Then when the cranberries are cooked, I add in about half a jar of sugar free seedless raspberry or strawberry jam. It gives the cranberry sauce a special taste. Everybody loves it, and doesn't even care that it is sugar free (well, no sugar added...it does have natural sugar from the fruits.)
