One package dry hominy. Two diced onions 2 cloves garlic, minced 1tbsp. garlic salt. Put all ingredients in a large pot with 2 quarts water. Boil about 2 hours until hominy is tender. Add extra water as needed While hominy is cooking: Three lbs. pork , cut into large chunks. Pork roast, boneless ribs, or chops will do. Leave the fat on, you can skim it later. In a blender add: large package frozen chili 1 tsp garlic powder 1 tsp oregano Fill remainder of blender with water. Blend until smooth Place pork into large baking dish, pour chili over meat. Cover and bake in 350 oven for 2 hours or until tender. When hominy is tender, add pork meat and chili and simmer. If you can't get dry hominy, you can use canned, just decrease cooking time. You can use dried chili powder or grind your own chili pods if that is what you can get. I like the frozen stuff cuz you don't have to deal with the seeds.
