I'm not sure what they are supposed to be called. I got the recipe from someone

here or on the pecanbread website. I call them Almond Butter Bars because my

kids all objected to the word " brownie " , since they don't have chocolate in

them. My non-SCD kids love them too. Here's how I make them:

1 C Almond butter

1/2 C Honey

1 Egg

1/2 tsp. Baking soda

1/2 tsp. Vanilla

Shake of salt

Mix everything together well. (I just use a spoon.) Scrape into 7x11 " pan

that's been sprayed with non-stick spray or well greased with butter or coconut

oil. Bake at 350 for about 20 minutes. Shouldn't be " jiggly " in the middle.

I'm sure you could use a 9x9 " pan too.

I usually triple the recipe since I have a bigger family. (9x13 " pan AND a 7x11 "

pan.) They freeze really well. I cut them into squares and put them into ziploc

bags and toss them into the freezer. The kids all take them for lunches.

What I call " Souffle Bread " probably isn't. It's a tweak on a recipe that

Marilyn has posted a few times. Here's how I make it:

4 Egg whites

2 Egg yolks

1/2 C Almond flour

Dash of salt

Separate the eggs. (The dog likes this part - he gets the two extra yolks.)

Beat the whites until they form soft peaks. Beat the yolks until they are

creamy. Add the almond flour, salt and egg yolks to the whites and gently stir

until it's all mixed together. Pour/scrape onto cookie sheet lined with

parchment paper and spread out until it makes about a 12 inch square. Then bake

at 350 for 12 minutes. I use a pizza pan that has holes in it and it makes the

bottom brown nicely. This makes great sandwiches!

You can also add a cup of grated cheese and some minced garlic and it makes good

pizza crust or bread to dip into soup. I use Sheep Milk Romano cheese. I made

this and cut it into bite sized pieces and then dried them in the oven to make

croutons. My son loved them and ate them like popcorn.
