Here's an additional one: http://www.nytimes.com/2009/10/26/health/26recipehealth.html?em I note the notion that cooking them for a long time breaks down the bitterness. I just picked a bunch of Swiss Chard from my garden and it was really bitter - like I had left it too long in the cold weather or something - so I'm hoping that this bit of advice will work for the rest of the chard.
